Fun with the Fryer

Last night for dinner, we made BBQ'd chicken, salads, grilled asparagus, and then.... we fried! For those of you thinking, "that can't be good for her" you are mistaken! While it is fried food, the fact that it's vegetables helps me out, and there are minimal carbs in the breading when it's all hot and fried. So what did we throw in? Mozzarella sticks, zucchini, mushrooms, and sweet potato fries for the boys. It was D-licious! And putting things down into the oil and hearing the sizzle... oddly, it's soothing, kind of like spraying a water hose. (If you're related to me you get this, if not... sorry. It's my favorite form of therapy!)


Here's the fryer, all ready to go!The assortment... flour, eggs, and panko mixture, along with zucchini, seasonings, and many other "things" needed!

The finished zuchinni... I did it in both spears and discs. No real preference, they were both amazing!
Here are a few of Tyler's mushrooms.... while I'm allergic and didn't have them, they sure looked good!
